When a micro market makes sense

  • 75+ employees are on shift through the day, with overlapping or rotating shifts.
  • The site has a dedicated breakroom or lounge, not a hallway corner.
  • There's a reliable delivery path for restocking, including airside if applicable.
  • Your team is asking for fresh food and healthier options, not just snacks.

What's in the market

A typical AVS micro market includes:

  • Fresh sandwiches, salads, fruit, and yogurt, rotated to keep selection moving
  • Cold and hot beverages, including premium and energy options
  • Snacks: chips, bars, sweets, healthy alternatives
  • Frozen and refrigerated cases sized to your sell-through
  • Single-cup coffee, optionally integrated with the market layout

How customers use it

Self-checkout kiosks accept card, mobile pay, and (on request) payroll deduction. The market is open 24 hours, with no staff required. We monitor inventory and shrinkage in real time and adjust the planogram based on what's actually selling.

What's involved in setup

From first call to live market is usually 4–8 weeks, depending on equipment and the site:

Common questions

A few things customers ask early on.

How much space do we need?

A workable micro market starts around 150–200 sq ft. Bigger sites get bigger markets. We'll size it on a site walk.

Who handles restocking?

We do, end-to-end. Daily, twice-weekly, or weekly, depending on what your sell-through and shift schedule call for.

What's the minimum headcount?

Roughly 75 employees on shift. Below that, vending or a hybrid program usually makes more sense.

Can payroll deduct be supported?

Yes, on request, integrated with most HR systems. Card and mobile pay are standard either way.

What about losses?

Self-checkout markets do see some shrinkage. We monitor it, report it, and adjust to keep it within industry-standard ranges.

Can we trial it?

Yes. We've onboarded most of our long-term customers through a low-risk pilot of 60 to 90 days, then we both decide.
